Have you wondered what Decoction Mashing is all about or wanted to try it but haven't yet?  WAHA is hosting a Decoction Clinic on Saturday January 17th from 10 am to 2 pm at Larry's Brewing Supply.  We will be doing a couple of batches at the same time of beer styles that traditionally use decoction mashing as part of the process.  We will have some take home literature to read and absorb later, but during the clinic, things will be hands on.  Lots of stirring, mixing, temperature reading, etc.  We will review the history and purpose of decoction mashing and offer perspectives from both camps who either are or are not true believers!  We'll talk about Melanoidin and Maillard.  We'll review how to calculate and accurately predict how much of the mash to decoct to achieve the next temperature rest.  All things that can be tricky the first time out.  Our hope is that you will come away with an understanding of the process and possibly try to use it for a beer in the future.  There will be a nominal fee of $10 per person that will include materials, some tastings and lunch.
